Course Instructions

This is a Basic Seafood HACCP course (OPTION 2).
The course must be taken in two parts or “segments”.


  • Register for Seafood HACCP Segment One ($175)
    This a self-paced Seafood HACCP Internet Course hosted by Cornell University. It can be taken in English or Spanish. Upon completion of Segment One, you are emailed a notification of course completion.
    Forward the email you receive to Alex Gerber (alex.gerber@oregonstate.edu), by October 01, 2026. If you need an exception please contact Alex Gerber directly.
  • Register for Seafood HACCP Segment Two ($400)
    This is a one-day, hands-on course and will be held on Thursday, October 08, 2026 at the Duncan Law Building, Coho Room (2nd Floor), Oregon State University Seafood Lab, 2001 Marine Dr., Astoria, OR 97103. If you would like to have the curriculum for this course in Spanish instead of English you will need to contact Alex Gerber (alex.gerber@oregonstate.edu) no later then September 18, 2026.

Participants in this Seafood HACCP Segment 2 course will, upon successful completion, be emailed a Certificate of Course Completion from the Association of Food and Drug Officials (AFDO) to demonstrate that they meet the training requirement of the FDA Seafood HACCP regulation.
