Servings: 2

Ingredients:

  • 1/4 cup old-fashioned oats
  • 1 teaspoon ground cinnamon
  • 2 medium Gala apples
  • 1 1/2 tablespoons sugar
  • 1 tablespoon yogurt
  • 1/2 tablespoon unsalted butter, melted
  • 1/4 cup water

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Spread oats evenly on a baking sheet. Bake for 4 to 6 minutes until the oats turn golden and toasted. Once done, set them aside.
  3. Reduce the oven temperature to 325°F (160°C).
  4. Rinse the apples and remove their cores, ensuring not to cut through the bottom. You can use an apple corer or a paring knife for this. Scoop out any remaining seeds with a spoon.
  5. In a medium bowl, mix together the toasted oats, sugar, cinnamon, yogurt, and melted butter. Spoon this mixture into the cavity of each apple.
  6. Place the stuffed apples in a baking dish and pour the water into the bottom of the dish.
  7. Bake the apples for 30 to 40 minutes until they are tender but not mushy.
  8. Once baked, top the apples with yogurt and a sprinkle of cinnamon.
  9. Serve and enjoy!
