{"id":1801,"date":"2008-10-08T07:34:54","date_gmt":"2008-10-08T15:34:54","guid":{"rendered":"http:\/\/wpmu.library.oregonstate.edu\/osu_archives\/2008\/10\/08\/1801\/"},"modified":"2008-10-08T07:34:54","modified_gmt":"2008-10-08T15:34:54","slug":"1801","status":"publish","type":"post","link":"https:\/\/blogs.oregonstate.edu\/scarc\/2008\/10\/08\/1801\/","title":{"rendered":"Prune Dumplings (6-8 servings)"},"content":{"rendered":"<p><a href=\"http:\/\/oregondigital.org\/cdm4\/item_viewer.php?CISOROOT=\/archives&amp;CISOPTR=2159\"><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/wpmu.library.oregonstate.edu\/wp-content\/blogs\/17\/uploads\/prune-sizer.thumbnail.jpg\" alt=\"prune-sizer\" \/><\/a><em>Prunes<\/em><\/p>\n<ul>\n<li>\u00be pound dried prunes<\/li>\n<li>\u00bc cup sugar<\/li>\n<li>1 tablespoon flour<\/li>\n<\/ul>\n<p><em>Dumplings<\/em><\/p>\n<ul>\n<li>1 \u00bd cups flour<\/li>\n<li>2 \u00bd tsps baking powder<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>1 tablespoon fat<\/li>\n<li>Milk, about \u00bd cup<\/li>\n<\/ul>\n<ol>\n<li>Bring prunes to a boil and soak 2 or 3 hours after boiling.<\/li>\n<li>Stew gently until tender.<\/li>\n<li>Mix flour and sugar of bottom column, add to the prune juice and cook until juice is thickened as a thin sauce.<\/li>\n<li>For the dough, mix and sift together all the dry ingredients of top column.<\/li>\n<li>Work in the fat either with fingers or knife.<\/li>\n<li>Add milk, making a drop batter. Drop by tablespoons on top of hot prunes.<\/li>\n<li>Cover and cook for 10 minutes.<\/li>\n<li>Serve immediately with nutmeg sauce<\/li>\n<\/ol>\n<p>Variation: Stew apples that hold their shape. When nearly done, cook dumplings on top of them. Serve with nutmeg sauce.<\/p>\n<p><em>Nutmeg\u00a0 Sauce (4 servings)<\/em><\/p>\n<ul>\n<li>1 cup milk or top milk<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>1\/8 teaspoon nutmeg<\/li>\n<\/ul>\n<ol>\n<li>Combine sugar and nutmeg dry.
