{"id":316,"date":"2023-03-17T16:20:33","date_gmt":"2023-03-17T16:20:33","guid":{"rendered":"https:\/\/blogs.oregonstate.edu\/healthybeaverbags\/?p=316"},"modified":"2023-03-17T16:20:33","modified_gmt":"2023-03-17T16:20:33","slug":"lentil-soup","status":"publish","type":"post","link":"https:\/\/blogs.oregonstate.edu\/healthybeaverbags\/2023\/03\/17\/lentil-soup\/","title":{"rendered":"Lentil Soup"},"content":{"rendered":"\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"576\" height=\"768\" src=\"https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/5859\/files\/2023\/03\/MicrosoftTeams-image-2.jpeg\" alt=\"\" class=\"wp-image-317\" srcset=\"https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/5859\/files\/2023\/03\/MicrosoftTeams-image-2.jpeg 576w, https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/5859\/files\/2023\/03\/MicrosoftTeams-image-2-225x300.jpeg 225w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/figure>\n\n\n\n<p>This recipe is adapted from <a href=\"https:\/\/cookieandkate.com\/best-lentil-soup-recipe\/\">https:\/\/cookieandkate.com\/best-lentil-soup-recipe\/<\/a><\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 Tablespoons Butter<\/li>\n\n\n\n<li>1\/2\u00a0medium yellow onion diced<\/li>\n\n\n\n<li>1 carrot, peel and cut into half circles<\/li>\n\n\n\n<li>Just under 1 Tablespoon of spice blend (1\/2 tsp garlic, 1\/4 dried thyme, 1\/2 tsp curry powder, 1 tsp cumin)<\/li>\n\n\n\n<li>1 can (15oz size) diced tomatoes (we used no salt added but any type is fine)<\/li>\n\n\n\n<li>1\/2 cup\u00a0brown  lentils, spread on a plate to check for rocks or debris, rinse before use<\/li>\n\n\n\n<li>2.5 cups\u00a0water (add more water at the end to create thinned soup, or eat as thick stew)<\/li>\n\n\n\n<li>additional salt and pepper to taste (optional)<\/li>\n\n\n\n<li>Pinch of red pepper flakes (add more to increase heat)<\/li>\n\n\n\n<li>1\/2 cup fresh kale cut out the rough stems and cut into bite sized pieces <\/li>\n\n\n\n<li>1\u00a0\u00a0tablespoons lemon juice <\/li>\n<\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Prep Lentils:  Lentils: spread 1\/2 cup lentil on a plate pick out debris and rocks if any, rinse.<\/li>\n\n\n\n<li>Prep Veggie: Cut small 1\/2 onion. Peel and wash carrot and cut into half circles. Wash Kale thoroughly, cut out stems and chop leaves into bite sized pieces. <\/li>\n\n\n\n<li>Get lemon juice. Cut lemon in half. Wrap and save one half for something else in your refrigerator.  Squeeze juice from the lemon into a cup. Set a aside.<\/li>\n\n\n\n<li>Measure just less than one Tablespoon of the spice blend. If there is more, it can be added later if you would like it to be stronger flavor.<\/li>\n\n\n\n<li>Open Tomato Can<\/li>\n<\/ol>\n\n\n\n<p>Get cooking!<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a pot on the stove over medium heat. Melt butter. Add onion and carrot. Cook till translucent. Note: the butter will color the onion yellow so it might not look clear.<\/li>\n\n\n\n<li>Add  spice blend and pinch (or more) red pepper flakes. Let spices heat for just 30 seconds or so.<\/li>\n\n\n\n<li>Add water, then tomatoes, lentils, heat till hot then cook for 25 minutes or until lentils are soft. <\/li>\n\n\n\n<li>Add Kale and Lemon Juice, adjust salt level. Add a little more water to adjust to desired consistency.
