Tomatoes from dead or frost-killed vines in your garden are unsafe to can. (Yes, it&#8217;s true!) Why? The pH in tomatoes attached to dead or frost killed vines change to a less acidic level that is unsafe for safe canning directions. Despair not, they&#8217;re still great for <a href=\"https:\/\/catalog.extension.oregonstate.edu\/pnw397\">drying<\/a>, <a href=\"https:\/\/nchfp.uga.edu\/how\/can_06\/kosher_green_tomato.html\">pickling<\/a>, <a href=\"https:\/\/catalog.extension.oregonstate.edu\/pnw214\">freezing<\/a>, and eating <a href=\"https:\/\/www.foodhero.org\/tomatoes\">fresh!<\/a>\u00a0<\/p>\r\n<figure id=\"attachment_62\" aria-describedby=\"caption-attachment-62\" style=\"width: 241px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-62 size-medium\" src=\"https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/3959\/files\/2020\/10\/green-tomato-ferment-241x300.jpg\" alt=\"\" width=\"241\" height=\"300\" srcset=\"https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/3959\/files\/2020\/10\/green-tomato-ferment-241x300.jpg 241w, https:\/\/osu-wams-blogs-uploads.s3.amazonaws.com\/blogs.dir\/3959\/files\/2020\/10\/green-tomato-ferment.jpg 750w\" sizes=\"auto, (max-width: 241px) 100vw, 241px\" \/><figcaption id=\"caption-attachment-62\" class=\"wp-caption-text\">Pickled tomatoes w edible flowers and whole spices. Photo courtesy of Kirsten Schockley via #fermentation on Instagram.<\/figcaption><\/figure>\r\n<p>The National Center for Home Food Preservation has some great ideas on uses for green tomatoes <a href=\"https:\/\/nchfp.uga.edu\/tips\/summer\/preserving_unripe_tomatoes.html\">here<\/a>. (Pickled green tomatoes are going into this year&#8217;s holiday gift baskets as part of a Bloody Mary kit.)<\/p>\r\n<div dir=\"auto\">\u00a0<\/div>\r\n<p>Clackamas County Master Food Preservers utilize every bit of their tomatoes by dehydrating the skins left over after peeling tomatoes for canning. It&#8217;s an easy, no-waste method of <a href=\"http:\/\/blogs.oregonstate.edu\/extendingtheharvest\/\">Extending the Harvest<\/a>. Dehydrated tomato skins, leftover pulp, and seeds become delicious tomato powder. Powder can be used in soup, sauce base, or paste, and is a perfect backpacking\/camping food. Bonus, it doesn&#8217;t require jars. Photo by Buffy Rhoades<\/figcaption><\/figure>\r\n<p>To make: Blend cooked skins, or whole cooked tomatoes into a sauce and spread on lightly oiled leather trays. <em>Caution! Let the sauce cool before blending in a blender! <\/em>Dry at 135<strong>\u00b0<\/strong>F for approximately 10 hours. After about six hours, the tomato leather should be dry enough to remove from the leather trays. Blend with a blender or food processor until powder. Store in an airtight container and shake to <a href=\"https:\/\/extension.missouri.edu\/gh1562\/#:~:text=Conditioning%20is%20the%20process%20used,of%20spoilage%2C%20especially%20by%20molds.\">condition<\/a>. To make into a thick sauce, add 1\/2 cup of boiling water to 2 1\/2 T of powder. It&#8217;ll thicken slowly. If you want a thinner sauce, gradually add water.<\/div>\r\n<div dir=\"auto\">\u00a0<\/div>\r\n<div dir=\"auto\">Hopefully you&#8217;re enjoying the warm afternoons, getting time in the kitchen and garden, stocking the pantry, and eating well.
