Mexican Street Corn

Ingredients

  • 2 corn cobs
  • 2 packets of mayonnaise / 4 tbsp of mayonnaise
  • 1/2 cup of grated cheese (Queso Blanco, Feta, Romano, or Parmesan)
  • 1 lime, sliced into wedges
  • Chili powder or Tajin

Directions

  • Place 5 cups of water in a big pot to boil
  • While the pot of water boils, remove the husks from the corn and make sure to clean off all the corn silk.
  • Once the corn is ready, place it into the pot of boiling water. Leave it in till cooked for 12-45 minutes (based on preference.)
  • After taking the corn out of the pot, place it on a plate to cool for 1-2 min
  • Once cooled put mayonnaise, lime, grated cheese, and finally chili powder or Tajin.
