Microwaved Egg Sandwich

Ingredients:

Egg, butter, English Muffin, Cheese, Avocado, Salt, Pepper

Instructions:

  1. Wash and slice avocado. (See YouTube video below for tips on safe avocado cutting)
  2. Slice English Muffin (toast it: optional).
  3. Use a small amount of butter to grease small glass bowl.
  4. Crack 1 egg into the bowl, add 1 splash water (teaspoon and a half), mix till uniform yellow color.
  5. Microwave egg for 45 seconds to a minute. Check underside of the egg to see if it set, if it is still runny and yellow, microwave 15 more seconds to set.
  6. Assemble the sandwich. Add cooked egg, cheese, avocado, salt and pepper to English muffin. Enjoy!

A note on microwave cooking time: The power level of a microwave will influence cooking time. 1200W microwaves will cook very fast, 1000W is more typical of home microwave 45-50 seconds and egg will be done most likely. A 750W microwave like in a dorm fridge combo unit may take 45-50 seconds and need another 15-30 seconds. You might need to experiment with your microwave. Eating undercooked eggs may be risky for foodborne illness.
