Japanese Curry – In Collaboration with the APCC

Ingredients:

  • 2 Golden Curry Japanese Curry Mix blocks (1 block serves 1 person)
  • 1 Cup of Rice
  • 2 Potatoes
  • 1 Onion
  • 2 Carrots 
  • Splash of cooking oil

Instructions:

Begin by cooking the rice. Wash the rice, until the water runs mostly clear. Then either cook in a rice cooker, or follow instructions for preparing rice in a pot. 

Cooking rice in a pot: Add water and rice to a pot (2 parts water for 1 part rice), and bring to a boil. Once boiling, reduce heat to low and cover with a lid. Let the rice simmer for about 18 minutes, until the water is absorbed. Do not lift up the lid to check or the steam will escape. After 18 minutes, turn off the heat and let the rice sit and keep it covered for another 10 minutes. After that the rice is done, and you can fluff it with a fork and serve.

To make the Curry, start by cutting the vegetables. Add them all to a pot and use cooking oil and medium high heat to lightly roast for roughly 5 minutes. Follow cooking instructions on the Curry box for the amount of water to use (this recipe uses 2 blocks). Add water to the pot and bring to a boil. Reduce the heat to medium, put a lid on the pot, and simmer for 15 minutes. Check to see if the Potatoes and Carrots are soft, and if not cook for longer. Once the vegetables are done, uncover the pot and turn off the heat. Add curry blocks as instructed on the box and stir until they are fully mixed in. Plate with rice and enjoy!
