Egg Breakfast Taco

Ingredients:

  • 2 large eggs
  • ½ onion, diced
  • 1 bell pepper, diced (any color)
  • Oil or butter
  • Salt
  • Pepper
  • Chili powder (to taste)
  • 3 small flour or corn tortillas
  • 1 Lime

Ingredients:

  1. Prepare Ingredients:
    • Dice onion and bell pepper.
    • Crack eggs into a bowl and lightly beat with a fork.
    • Season eggs with salt, pepper, and chili powder.
    • Cut lime in half.
  2. Sauté Onion and Pepper:
    • Heat oil or butter in a medium skillet over medium heat.
    • Add diced onion and bell pepper to the skillet.
    • Sauté for 3-4 minutes until veggies are softened and lightly caramelized.
  3. Cook the Eggs:
    • Pour beaten eggs into the empty side of the skillet.
    • Gently scramble eggs with a spatula, mixing in the veggies.
    • Cook and stir until eggs reach your desired consistency.
  4. Warm Tortillas:
    • In another skillet, heat tortillas until warmed through.
    • Alternatively, wrap tortillas in a damp paper towel and microwave for 20-30 seconds.
  5. Assemble Tacos:
    • Divide scrambled eggs and veggie mixture evenly among the warmed tortillas.
    • Squeeze fresh lime juice over each taco.
    • Optional: Add toppings like shredded cheese, salsa, avocado slices, or cilantro.
