Food Hero Recipe: Applesauce French Toast

June 14th, 2012

Now that the busyness of finals are over, it may not be such a dash to get out of the house in the morning. Savor your breakfast with this healthy version of a favorite comfort food- French toast. This recipe uses unsweetened apple sauce and whole wheat bread for added fiber. Top with summer-fresh berries and crunchy, Omega-3 packed walnuts for added nutrition and flavor.

2 eggs
1⁄2 cup milk
1 teaspoon ground cinnamon
2 tablespoons white sugar
1⁄4 cup unsweetened applesauce
6 slices whole wheat bread

  1. In a large mixing bowl, combine eggs, milk, cinnamon, sugar and applesauce. Mix well.
  2. Soak bread one slice at a time until mixture is slightly absorbed.
  3. Cook on lightly greased skillet or griddle over medium heat until golden brown on both sides.
  4. Serve hot.

OMG my kids absolutely love these french toasts. They were getting bored of the regular french toast and pancakes for breakfast. I’m starting to experiment with other fruit sauces to see if they enjoy them too. Thanks for the recipe!
