Food Hero Recipe: Farmers Market Salsa

Looking for that perfect dish to bring to your next “get-together”? The farmer’s market salsa really delivers! Packed with an assortment of colored vegetables along with protein rich black beans, your friends will surely ask you for your recipe!




1⁄2 cup fresh cooked or frozen corn
1 can (15 ounces) black beans, drained and rinsed
1 cup fresh diced tomatoes
1⁄2 cup diced onion
1⁄2 cup diced green pepper
2 tablespoons lime juice
2 cloves garlic, finely chopped
1⁄2 cup picante sauce


  1. Combine all ingredients in a large bowl. Chill until serving time.
  2. Drain before serving.
  3. Refrigerate leftovers within 2-3 hours.


Serve with low-fat baked tortilla chips or fresh vegetables.

    Make this in August for a true Farmers Market salsa – local tomatoes, peppers and corn should be in season by then! I would also sub local pinto beans cooked from scratch and pair with local tortilla chips. Yum!
